Vegan Oatmeal Chocolate Chip Pancakes
Yields eight 5-inch pancakes

1.5 cups White Pine Oatmeal Chocolate Chip Pancake Mix
1 cup soy milk (more or less for thinner/thicker batter)
2 tbsp. oil (optional)

-Whisk together oil and soy milk. Combine liquid with dry mix
-Add more soy milk or pancake mix to desired consistency
-Rest five minutes, then cook over medium heat with margarine or pan spray
-Pour 1/3 cup of batter on griddle until bubbles form and start to pop
-Flip with spatula, cook another 30 seconds until light brown

Serving Suggestions:
These are great with syrup, whipped topping, or even on their own with a little margarine on top.
Sliced bananas and fresh strawberries also go great on top.
You could also serve them as a dessert with some vanilla soy ice cream.
